Gluten Free Pecan Apple Crisp

Apple Filling:

6–7 medium apples (Honeycrisp, Fuji, or Granny Smith), peeled and sliced

2 tbsp lemon juice

3 tbsp sugar

1 tsp cinnamon

¼ tsp nutmeg

1 tsp vanilla extract

1 tbsp cornstarch or arrowroot starch

Pecan Topping:

1 ½ cups pecan meal (finely ground pecans)

½ cup chopped pecans (optional for extra texture)

½ cup brown sugar or coconut sugar

½ tsp cinnamon

¼ tsp salt

5 tbsp melted unsalted butter (or coconut oil for dairy-free)

Instructions:

Preheat oven to 350°F and lightly grease a 9x9-inch baking dish.

In a large bowl, toss the apples with lemon juice, maple syrup, cinnamon, nutmeg, vanilla, and cornstarch. Mix until evenly coated and spread into the baking dish.

In another bowl, combine the pecan meal, chopped pecans, brown sugar, cinnamon, and salt. Stir in the melted butter until the mixture resembles coarse crumbs.

Sprinkle the topping evenly over the apples and bake for 40 to 45 minutes, until the top is golden and the filling is bubbling around the edges.

Let it rest for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.
