2 cups Pecan Meal
1 ½ cups Old Fashioned Rolled Oats
1 tbsp Pumpkin Pie Spice
1 tsp Baking Soda
½ tsp Fine Sea Salt
3 Eggs
1 ½ cups Pumpkin Puree, unsweetened
6 tbsp Unsalted Butter, melted
½ cup Pure Maple Syrup
Instructions:
- Preheat oven to 350°F and line or spray a muffin pan with liners or non-stick cooking spray.
- In a large bowl, combine all dry ingredients.
- In a separate bowl, combine all wet ingredients.
- Fill the muffin pan and bake for 20-22 minutes.
- Serve, and enjoy!
