Pecan Chewies

Buttery, rich, and irresistibly chewy, these Southern-style Pecan Chewies are loaded with pecans and brown sugar goodness. Ingredients:

3/4 cup Butter (1 1/4 sticks)

3 cups packed Brown Sugar

1 1/2 teaspoons Vanilla

3 cups Self-Rising Flour

1.5 cups Pecan Pieces 

1.5 cups Pecan Meal 

3/4 cup plain Greek Yogurt (as egg substitute — 1/4 cup per egg)

 

Instructions:

1. Preheat oven to 350°F (175°C).

2. Grease a 9x13-inch dish (or 11x17-inch for thinner bars) with non-stick spray; set aside.

3. Add flour to the mixing bowl; set aside.

4. Melt butter in a large microwave-safe bowl.

5. Stir in brown sugar.

6. Mix in vanilla, Greek yogurt, and leaven pieces until well blended.

7. Add pecan meal and chopped pecans; mix until evenly distributed.

8. Spread thick batter into prepared dish.

9. Bake for 25–30 minutes, or until golden brown.
